Speculaas cookie ball

The cookie ball is a perfect choice for a quick treat for guests. This festive-looking version is based on the wonderful speculaas cookie—the best option is the one made from MIMOOSA Spiced Cookie Flour, but of course, store-bought cookies work too. If you already have baked cookies, it comes together very quickly; if you need to bake them, that’s no problem either: you can find the recipe here.

Ingredients:

150 g speculaas cookies made from MIMOOSA Spiced Biscuit Flour (according to the recipe on the package)

  • 40 g vegan mascarpone
  • 40 g melted white chocolate

For the coating:

  • 100 g melted white chocolate
  • 4 g oil or melted plant-based butter substitute

Grind the cookies into fine crumbs. Mix the ingredients together and shape the dough into balls of about 20 grams each—roughly the size of a large bite. Place the balls on a baking tray lined with parchment paper, then freeze for 15 minutes.

Meanwhile, melt the white chocolate over a double boiler or in the microwave, and stir in the oil until smooth.

Dip the well-chilled cookie balls into the melted chocolate and decorate as you like.

This treat is delicious. If the decoration turns out well, you can even give it as a gift.
