Flour Plus is an essential ingredient for making delicious and excellent gluten-free bread. It’s a magical component that can "replace" the gluten missing from our breads.

All it needs is a bit of hot water, and voilà, it transforms into the flexible and elastic texture we need. In this state, it can perfect gluten-free flours or flour blends without artificial or less healthy additives.

Try it with Bread Flour Base, but feel free to experiment with other flours that haven’t yet yielded edible bread or that you want to make even tastier. You can find the exact recipe and a more detailed description below!

Description

Do you remember what bread was like before your gluten-free diet? Soft, flexible, fresh for days, and most importantly, delicious, right? After all, it contained gluten, which gave the bread its familiar texture.

We replace this gluten, or gluten protein, with our MIMOOSA flour supplement, knowing that while it may not be exactly the same, it can still make excellent bread in its own way.

Golden flaxseed and psyllium husk flour are well-known ingredients in the gluten-free world. We’ve chosen these two for our product, taking advantage of their beneficial fiber content. What’s new is how we use these flours: instead of simply adding them to other ingredients, we prepare them with water to enhance the texture of any basic bread flour mix.

The components of Flour Plus have great health benefits as well. For instance, the prebiotic fibers in psyllium husk support the harmonious functioning of the digestive system, while the fiber-rich golden flaxseed flour also provides omega-3 fatty acids.

Usage of Flour Plus: It makes breads more flexible, soft, and easy to slice, and improves their shelf life. As an excellent flour supplement for making bread, loaves, and rolls in combination with Mimoosa Bread Flour Base, it’s also worth trying with other flours and flour blends too! Sourdough Loaf

Ingredients:

Instructions:

  1. Add the Bread Flour Base to a mixing bowl, measure in the salt and the sourdough starter, and mix the ingredients well.
  2. Place the Flour Plus in another bowl. Boil 300 g of water and immediately pour it over the Flour Plus. Stir rapidly until you get a sticky mass that pulls away from the sides of the bowl. Set aside to cool.
  3. Once the mixture is cool enough to handle, knead it into the flour mixture. The dough will come together in a few minutes.
  4. Shape the dough into a loaf, baguette, or smaller bread as desired, then cover it or loosely wrap it in plastic wrap to prevent it from drying out. Let it rise at room temperature for 10-12 hours. The bread will be ready to bake at this point, but if you want a richer flavor and lighter texture, refrigerate the dough for an additional 10-12 hours.
  5. Before baking, place the loaf on a floured baking sheet and score it in several places with a sharp knife, about 1 cm deep. The crust will turn out better if you brush it lightly with olive oil.
  6. Preheat the oven to 210°C (410°F). Bake at this temperature for 20 minutes, then reduce the heat to 200°C (390°F) and bake for an additional 30 minutes. The loaf will be even better if it is surrounded by steam during baking; place a small dish of water in the bottom of the oven.
  7. When done, place the loaf on a rack and let it cool completely.

Are the flours guaranteed to be gluten-free?

Yes! All of our products are gluten-free, meaning they never come into contact with gluten at any point—from the field to your kitchen. Our production facility works exclusively with gluten-free materials. You can safely enjoy the delicious treats made with our flours, even if you’ve been diagnosed with celiac disease. In fact, two members of the MIMOOSA team are in the same boat, so we understand your concerns.

Is the sourdough culture gluten-free as well?

Absolutely. The bacteria and yeast are naturally gluten-free. However, keep in mind that our sourdough culture does contain lactose, though in very small amounts!

Is the sourdough culture made from flour and water?

What makes the MIMOOSA sourdough special is that it only contains bacterial culture — it's NOT powdered sourdough or yeast. The ingredients are lactic acid bacteria, selected strains of yeast, inulin (plant fiber), and the bacteria’s carriers: maltodextrin, sucrose, and lactose.

Why is long-fermented sourdough bread good for you?

The tradition of sourdough fermentation has been around for thousands of years, and for good reason. Bakers and their customers long ago realized that slow-fermented sourdough breads have health benefits. Today, science supports this — during fermentation, the beneficial bacteria in sourdough start breaking down the components of the dough. In a sense, it’s a type of pre-digestion, which makes it much easier on the stomach and digestive system. Since carbohydrates are also broken down, sourdough bread causes a lower rise in blood sugar compared to regular bread.

How long can sourdough bread be stored?

At room temperature, MIMOOSA sourdough bread stays fresh for 2-3 days. If it’s well-baked, it won’t mold after that, but it will start to dry out. In hot weather, it’s best to store it in the fridge, but be aware that this may slightly alter its texture.

What does this bread taste like?

We can confidently say it’s delicious! Of course, taste is very personal, but during our extensive testing, even non-gluten-sensitive tasters consistently said it tasted just like “regular” bread, with a hint of rye flavor.


That said, don’t expect it to taste like store-bought white bread! The beauty of MIMOOSA bread is that it’s not a substitute or imitation. It doesn’t try to mimic anything else - it’s simply a delicious and healthy gluten-free bread!
