Once upon a time, there was a diagnosis... This is often how gluten-free projects come into existence around the world. My story was no different.
My life turned upside down when my doctor handed me a paper with the previously unknown word: celiac disease. The forced diet and the changed daily routine pushed me to find ways to improve, make adjustments, and find a new kind of balance.
If you’re affected too, you know what it means. Constant vigilance while shopping, experimenting in the kitchen, testing ingredients, countless failed attempts, and immense joy when you finally find a working recipe for a “free-from” dish.
The result of this long process is the flour blend we are now happily introducing to you — because after a while, I wasn’t fighting alone in my kitchen. With family and friends’ support, we consciously searched for the right ingredients to bake our bread. Because perhaps the most painful part of living in a gluten-sensitive world is that “free-from” bread never seems to be exactly what we crave, whether it’s the taste or the texture that’s missing.
That’s why we were so thrilled when we finally found the best ingredients and the ideal baking method. We loved that moment and continue to love the bread we bake for ourselves at home. Thus, from a vulnerable, ever-desiring but timid mimosa existence, MIMOOSA emerged as the bold answer to this lifelong challenge.
Two of our four founding members live with celiac disease, so you can rest assured, we know what’s safe and what’s not. Everything you buy from us is completely gluten-free.
