Recept

Gluten-Free Gnocchi

Ingredients (4 servings)

500 g cooked, mashed potatoes

150 g brown rice flour (+ a little extra for rolling)

1 egg

1 tsp salt

Preparation:

Mash the hot, cooked potatoes until smooth, then let them cool to lukewarm. Add the egg, salt, and brown rice flour, and knead into a soft but workable dough.

On a floured surface, roll the dough into finger-thick ropes, cut into 1–2 cm pieces, and gently press the tops with a fork.

Cook the gnocchi in boiling salted water. As soon as they rise to the surface, remove them.

Serve with fresh basil tomato sauce, pesto, or a light vegetable ragout!

Tip:

You can also pan-fry the cooked gnocchi in a little olive oil – they’ll turn crispy on the outside and stay soft inside.
