We are living in the era of sorghum’s rediscovery, even here in Hungary. This super plant has been an important staple in Africa for millennia, but European farmers have only recently begun to see it as a food crop. While sorghum has long been used in animal feed, it has finally arrived where it truly belongs, in our kitchens.

A true climate warrior

It’s no coincidence that agricultural companies are turning to sorghum now. A plant that thrives even on savannas is far more drought- and heat-tolerant than our temperate-climate grains. Compared to corn, for example, it requires 40–50% less water over its life cycle. Sorghum can handle increasingly extreme weather—something we can hardly thank it enough for.

On top of that, sorghum cultivation requires far less fertilizer and pesticides, meaning the edible grain contains far fewer artificial contaminants than other cereals. And here’s another superpower: even in wet conditions, sorghum grains show no detectable levels of toxins.

More than a gluten-free alternative

Sorghum is naturally gluten-free, though care must be taken during cultivation to avoid cross-contamination. But it’s not only suitable for those with gluten intolerance—the health-conscious can benefit from it too. Here’s why:

  • Its carbohydrates are largely slow-digesting.
  • Nutrient-dense: a 100 g serving provides roughly 18% of daily iron, 25% of vitamin B6, 37% of magnesium, and 30% of copper. Sorghum grains also contain significant amounts of phosphorus, potassium, zinc, and thiamine.
  • High in protein.
  • Research shows it can reduce inflammation in the body and may positively affect blood sugar levels.
  • For IBS sufferers, flour made from hulled sorghum is very well tolerated.
