The preparation of “multiply free” foods can often seem complicated or time-consuming – but just look at this excellent, savory snack, how easy it is to bake! Its base is MIMOOSA Simple Cookie Flour, which our dietitian, Luca, supplemented with a few healthy ingredients to make a super-tasty snack that fits into a vegan, whole-food plant-based diet.

- The Cookie Flour is high in fiber and very rich in protein
- Turmeric is an excellent source of antioxidants and can also promote anti-inflammatory processes
- Black pepper can help multiply the beneficial effects of turmeric (and also gives the sticks a great color)
- Nutritional yeast is a good source of B vitamins + also provides the cheesy flavor
The finished sticks are slow-digesting, high in fiber, additive-free, and besides being gluten-free, they are dairy- and egg-free, and nutritious. In addition, they contain healthy fats without requiring margarine/butter for preparation.
So, let’s see the recipe!
Ingredients
- 155 g MIMOOSA cookie flour
- 100 g almond flour
- 240 ml plant-based milk – best homemade, e.g., from cashews
- 20 g gluten-free nutritional yeast
- 7 g salt
- a pinch of turmeric
- a pinch of ground black pepper
- phosphate-free baking powder

Preparation
Thoroughly mix the dry ingredients, then pour in the plant-based milk. First, mix with a spoon until you get a dough that can be kneaded by hand. Once the dough separates from the sides of the bowl, set it aside to rest for about 5 minutes.
On a silicone surface with a silicone rolling pin, no flouring is needed; if you use wood, lightly sprinkle the surface. Roll the dough out to about 5 mm thickness, then cut into sticks of your choice.
Bake in a preheated oven at 180°C for 15–18 minutes until (slightly) golden. Be careful, as they burn easily!
