Our traditions and customs are deeply rooted within us—especially when it comes to our food. We find it hard to change, hard to let go of familiar tastes and appearances—particularly when it comes to our daily bread.

In a gluten-free diet, it’s a real challenge to bake bread that meets modern nutritional recommendations while still being “white” and delicious.

With our Simple White Bread Flour, we offer a solution to this challenge:

  • millet-free, for those who either don’t like it or avoid it for health reasons

Recept

White loaf ingredients

  • 250 g Simple White Bread Flour
  • 6 g salt
  • 1 measuring spoon Mimoosa Simple Sourdough Starter or gluten-free dry yeast
  • 290 ml water (40–45°C)

Preparation suggestion


Measure the flour, salt, and sourdough starter or dry yeast into a mixing bowl, and mix the ingredients well.
Pour the water into the bowl and use a spoon to quickly bring the dough together. Continue kneading the slightly sticky dough by hand for a few minutes. Shape it as you like, into a loaf or baguette, and cover it with plastic wrap or a beeswax wrap to prevent it from drying out.

Let it rise at room temperature: with sourdough: 10–12 hours, with yeast: 1–2 hours

Before baking, place the loaf on a floured baking sheet and score it in several places with a sharp knife, about 1 cm deep.


Preheat the oven to 200°C and bake for 50 minutes. Your loaf will be even more delicious if it bakes surrounded by steam. Simply place a small dish with a few deciliters of water at the bottom of the oven.

When done, place the loaf on a rack and let it cool completely.
