Description

Everyone knows cookies, and almost everyone loves them. Their popularity is no coincidence: they’re easy to make, store, transport — and eat. Biscuits accompany us through everyday life, they’re on the holiday table (though then we call them gingerbread), hidden in a secret kitchen cupboard box, tucked into school bags, or packed for hiking trips. They’re always handy when hunger strikes, and you never have to worry about them spoiling before you arrive wherever you’re going.

Biscuits are a treat we can still enjoy even on a restricted diet — as long as we pay attention to moderation, calorie content, and the other elements of our nutrition. With MIMOOSA cookie flour and a good recipe, you can bake healthy and delicious sweet or savoury pastries.

As always, we followed MIMOOSA’s core principles when choosing ingredients: we used only natural raw materials, avoided additives, and focused on fibre content and nutritional value. The result is a wonderfully simple flour mix that serves perfectly as a biscuit base on its own, but if you enrich it further with ground seeds, walnuts, poppy seeds, or almonds, you can create even more mouth-watering treats.

Preparing the biscuit dough takes only a few minutes, and shaping it is almost child’s play.

A bit of biscuit history

Unfortunately, we don’t know who first baked a biscuit, but we can be sure it happened a very long time ago. Even the Romans enjoyed long-lasting, slightly sweet delicacies such as the bis coctus, twice-baked bread, the ancestor of today’s biscuits, perfect for endless sea voyages or everyday life alike.

The Hungarian word keksz was borrowed from German (Keks), which in turn came from English (cakes) — showing that this dry little pastry has truly travelled the world.

Europe’s biscuit-making success story began in the 19th century, when Western Europe started producing them on an industrial scale, initially for soldiers and sailors.

In Hungary, the ever-popular treat became widespread thanks to Emil Gerbeaud, and by the end of the century, the first Győri Keksz factory — a brand beloved by all — opened its doors.

Today, countless varieties of the famous and well-loved biscuit exist — just like chocolate: there are hollow, filled, nutty, round, square… and of course, gluten-free versions too.

Usage: Ideal for making cookies, linzer tarts, gingerbread, sweet and savory pies; a fiber-rich flour blend. Can be further enriched with seed flours, ground walnuts, poppy seeds, or almonds.

Contains no added sugar. Naturally occurring sugars present.

Gluten-free, dairy-free, soy-free, egg-free, additive-free.

May contain traces of mustard, sesame seeds, and celery. Produced in a facility that also processes tree nuts.

Recipe

Lemon Cookie Recipe

Ingredients for Lemon Cookies:

  • 250 g Mimoosa Simple Cookie Flour
  • 100 g sugar
  • 1 packet vanilla sugar
  • ½ teaspoon baking soda
  • Pinch of salt
  • Zest of 1 untreated lemon (you can use 2 if you like)
  • Juice of 1 untreated lemon
  • 100 g butter or plant-based fat (e.g., coconut oil)
  • 2 eggs
  • 2–3 tablespoons milk or plant-based milk (depending on egg size)

Preparation Suggestion:

Thoroughly mix the dry ingredients in a bowl and grate in the lemon zest. Melt the butter and add it to the lightly beaten eggs, then pour this mixture, along with the milk (or plant-based milk) and lemon juice, into the dry ingredients. Mix roughly with a spoon at first, and once it starts coming together, continue kneading by hand. The dough should separate nicely from the bowl within a few minutes. It’s good when soft, easy to knead, but holds its shape. Let the dough rest for 10 minutes.

Roll out on a lightly floured surface to 4–5 mm thickness and cut into desired shapes. Bake in a preheated oven at 180°C for 12–13 minutes, until golden brown.

Are the flours guaranteed to be gluten-free?

Yes! All of our products are gluten-free, meaning they never come into contact with gluten at any point - from the field to your kitchen. Our production facility works exclusively with gluten-free materials. You can safely enjoy the delicious treats made with our flours, even if you’ve been diagnosed with celiac disease. In fact, two members of the MIMOOSA team are in the same boat, so we understand your concerns.

Is the sourdough culture gluten-free as well?

Absolutely! The bacteria and yeast in our sourdough cultures are naturally gluten-free.

Is the sourdough culture made from flour and water?

What makes the MIMOOSA sourdough special is that it only contains bacterial culture - it's NOT powdered sourdough or yeast. There is no flour or water in it. The ingredients are lactic acid bacteria, selected strains of yeast, inulin (plant fiber), and the bacteria’s carriers: maltodextrin, sucrose.

Why is long-fermented sourdough bread good for you?

The tradition of sourdough fermentation has been around for thousands of years, and for good reason. Bakers and their customers long ago realized that slow-fermented sourdough breads have health benefits. Today, science supports this — during fermentation, the beneficial bacteria in sourdough start breaking down the components of the dough. In a sense, it’s a type of pre-digestion, which makes it much easier on the stomach and digestive system. Since carbohydrates are also broken down, sourdough bread causes a lower rise in blood sugar compared to regular bread.

How long can sourdough bread be stored?

At room temperature, MIMOOSA sourdough bread stays fresh for 2-3 days. If it’s well-baked, it won’t mold after that, but it will start to dry out. In hot weather, it’s best to store it in the fridge, but be aware that this may slightly alter its texture.

What does this bread taste like?

We can confidently say it’s delicious! Of course, taste is very personal, but during our extensive testing, even non-gluten-sensitive tasters consistently said it tasted just like “regular” bread, with a hint of rye flavor.

That said, don’t expect it to taste like store-bought white bread! The beauty of MIMOOSA bread is that it’s not a substitute or imitation. It doesn’t try to mimic anything else - it’s simply a delicious and healthy gluten-free bread!
