This sweet and savory sandwich could easily be the highlight of your morning, made with just a few ingredients on any weekday. Plus, it’s perfect for using up day-old bread!
You can make it with sourdough or yeast bread.
Ingredients:
For the sandwich base:
- 2 slices of MIMOOSA bread
- 2 tablespoons of plain pistachio cream – Get it here!
- 1 large peach or nectarine
- 1 tablespoon olive or avocado oil
- Salt
- Freshly ground pepper
For the dressing:
- 1 teaspoon honey
- 1 teaspoon olive or avocado oil
- Chili flakes or finely chopped fresh chili
- Salt
For garnish:
- Fresh basil leaves
Instructions:
- In a skillet, toast the bread on both sides in oil, adding salt and pepper to enhance the flavor while it cooks. Once golden, place the toasted bread on a rack to keep the bottoms from getting soggy.
- In the same skillet, toss in the thinly sliced peaches. Cook until lightly golden, about 1-2 minutes on each side. While the fruit caramelizes, mix together the dressing ingredients in a small bowl.
- Spread the pistachio cream on the toasted bread slices. Gently arrange the fragrant peaches on top, then drizzle with the dressing.
- Finish by sprinkling plenty of fresh basil leaves on top.
